The original mechanism, 0.02 mL steps

The first-generation body uses a screw-back plunger you reset by twisting the rear knob counter-clockwise until it stops. Each click moves 0.02 mL, and the dose window is printed rather than engraved.

Plunger reset: screw-back vs push
The V1 resets by twisting the rear knob anticlockwise until the internal rod runs back to zero. It takes a few seconds and you cannot get it wrong, which is why a lot of people still prefer it.
The V2 replaces that with a push-to-reset collar: press the rear cap in and the rod releases in one motion. It is quicker, but it needs a deliberate squeeze, and anyone with reduced hand strength should try it before committing.
Click precision and counting
Click counting is how most people dose with these pens, so the quality of the detent matters more than the specification sheet suggests.
The V1 detent is soft: in a quiet room it is fine, but in a busy kitchen it is easy to overshoot by one. The V2 uses a stiffer spring and a sharper ramp, which gives a click you can both hear and feel through the thumb.
0.01 mL vs 0.02 mL in practice
Resolution only matters relative to your dose. If your usual draw is a round multiple of 0.02 mL, the V1 costs you nothing.
If you routinely land between two V1 clicks, the V2 removes the rounding entirely. The trade is twice the click count per dose, which is more chances to lose your place.
Build durability over a year
The V1's polymer lead screw is the part that fails first: after heavy use the threads round off and the dial starts slipping under load.
The V2's steel screw and engraved scale are the two upgrades most likely to still matter in year three. If you expect to keep the pen, the higher price amortises well.

Buy the V2 unless price is the deciding factor. The finer increment, the countable click and the steel lead screw all address the exact complaints people have about the V1. Keep a V1 as a travel spare.
